Carnivals,
town fairs, parades of giants and religious
processions, most of them with their origins
in the world of sea-fishing, are the occasion,
in summer and winter alike, for merriment,
laughter and amusement, an opportunity
to gather for a meal where the traditional
mussels and chips lead on to sausages,
Bergues cheese and finally Bourbourg chocolates
made with chicory.
